Applebee's Copycat Recipe
Seasoned, grilled shrimp skewers on citrus island rice with pineapple. Served with seasonal vegetables.
4 whole lemons-juice only
16 shrimp peeled & deveined
4 whole limes-juice only
1 tsp salt
1 tsp ground pepper
2 Tbsp cider vinegar
1/2 cup olive oil
Combine all the marinade ingredients into a resealable plastic bag.
Marinate in the refrigerator for at least 2 hours.
Save the lemons and lime to add to to the rice.
Place the shrimp on skewers (if they are wooden you need to soak them in water so they don't burn)
Cook the shrimp until done. I use a George Foreman grill and it only takes a few minutes. Watch them closely so they don't burn.
I looked at a lot of tropical rice recipes and they all call for adding fruit while cooking and into the recipe at the end. Below you will find a basic recipe for citrus rice and you can play with the flavors that you like.
I learned from a Cajun friend that the best way to cook flavored rice is to bake it in the oven.
This is how I made mine
You need a baking dish and a coffee cup to measure.
Add 1 cup of rice
Add 2 cups of liquid. You can use lemon juice, lime juice or the juice from the pineapple can. Make sure to dilute it with water to make 2 full cups of liquid. You may also add the lemon and lime rinds for added flavor.
Cover the baking dish with aluminum foil and bake in the oven at 350 degrees for 1 hour.
Your rice will come out perfectly every time.
