CHICKEN FAJITA ROLLUP

Applebee's Chicken Fajita Rollup














We're on a roll with this unique take on the classic fajita. Smoky chipotle chicken rolled in a flour tortilla with melted Monterey Jack and cheddar cheeses, shredded lettuce and pico de gallo. Served with Mexi-ranch dipping sauce.


SERVES 1

ROLL UP
1 large round white tortilla shell
1/2 cup grilled chicken, fajita seasoned
1/8 cup pico de gallo
1/2 cup shredded jack and Cheddar cheese mix
diced tomatoes, to taste
shredded lettuce, to taste

DIPPING SAUCE

Place your tortilla shell on a microwave safe plate. Place the chicken and cheese on top and put in the microwave just long enough to melt the cheese. Add: lettuce, tomatoes, pico de gallo and spicy ranch dressing.  Fold like a burrito and slice in half. Serve remaining dressing on the side for dipping.

Mexi-Ranch Dressing: Mix chili powder and Ranch dressing together to taste.
