10 baked potato halves
1Tablespoon melted butter
seasoned salt, to taste
- ¾ cup shredded cheddar cheese
- 5 strips of cooked and crumbled bacon
- 1 green onion, diced
- sour cream or
- Ranch dressing
Preheat the oven to 375°F.
Prepare the Potatoes
Remove as much of the potato flesh as you can,
leaving only the skins.
Brush potato shells with butter and season with salt.
Bake for 15–20 minutes, until crisp.
Add the Toppings
Remove the potato canoes and sprinkle with cheese, bacon, and onion.
Place back in the oven for 6–8 minutes, until the
cheese has melted.
Serve with sour cream or ranch dressing
These are a great way to use left over baked potatoes or you can plan ahead if you want to make this dish. To cut the calories, substitute fat free dairy products and swap the cooked bacon for bacon bits.
